spinach artichoke dip recipe

let me preface this with…i am NOT a good cook. and my baked goods are almost always straight from a box (gasp!). but there are a few things that i have made SO many times now that i’m getting pretty good at them. my mom made me a recipe book of her fave recipes for my 35th bday (wow that seems so long ago…i will be 38 in a few weeks) and this dip is one of them. i made it this past weekend and since it got such a great response on instagram, i thought i would share the recipe. i should also mention that this is more of a cheese-y spinach artichoke dip. lastly, a big thank you to my mom for letting me share her AMAZING recipe!

ingredients:
2 tablespoons butter
1/2 small onion diced
1 10oz package frozen spinach, thawed and WELL drained (although i only use about half since i like less spinach)
1 14oz can of artichoke bottoms drained and chopped
1 8oz package of cream cheese
1 8oz container of sour cream
1 cup shredded monterrey jack cheese
1 cup grated parmesan cheese
salt to taste
splash of tobasco (optional)

preheat oven to 350 degrees. melt butter and onion til soft. stir in spinach, artichokes, cream cheese, sour cream, 3/4 cup of the monterrey jack cheese, 3/4 cup of the parmesan cheese and salt. stir until well blended and heat through. pour into an 8×8 baking dish and top with remaining cheese. bake until top browns…about 10 minutes. i like to serve with toasted pita bread but you can also use cubed bread, crackers or tortilla chips. makes about 4 cups. enjoy!

just a warning though…i pretty much ate the whole thing myself. it is THAT good.
